Here you can see that the new wood from the keel base was actually fitted temporarily onto the old one.

You cannot simply dismantle all parts of a yacht at the same time. You have to carefully remove individual parts one at a time and also stabilise the rest again each time. Otherwise, the yacht would bend or even fall apart.
This is one of the reasons why a restoration is more time-consuming than a new construction.
